Vegan maple, wheat and nut Spritz cookies

I’m on a roll making new kinds of Spritz cookies! I discovered a very easy way of making a no sugar, whole wheat cookie with your favorite nut powder. I’ve tried this with finely powdered cashews, almonds and pistachios. They all work well, but my favorite is a combination of cashew and pistachios. The pistachios give a nice green color that makes it attractive.

For this post I used readily available almond meal. The cookies even have a glazed look with the effect of maple syrup.

Who said you need sugar to make holiday bakes? If you have a cookie press lying around, this is the chance to make a delicious, yet healthy cookie!

Preparation time: 10 minutes to mix and make the shapes, 13 minutes to bake. This recipe makes about 17 cookies.

Ingredients:

nut meal- 1/2 cup

whole wheat pastry flour- 1/4 cup + 1 tbsp.

tapioca starch- 2 tbsp. (can use cornstarch)

pure maple syrup- 1/4 cup

Method:

* Mix all the ingredients in a bowl with a ladle. Warning: the mixture is a little sticky!

* Fill your cookie press with this batter to create the shape of your choice.

* Line a baking sheet with a baking mat or parchment paper, and make the shapes in no time. Don’t forget to flour the surface before starting to press!

* Bake in a preheated oven at 350 °F for 12-13 minutes. Allow to cool completely on a wire rack.
