Roasted, Curried Spaghetti Squash or Upma

Talk about spaghetti squash in the summer!
I have been making this incredibly easy and simple snack/ meal in my home for a year now, and have had multiple friends ask for the recipe. I finally got down to posting the recipe today!
Make this for your kids while we get this wonderful vegetable and see how they enjoy the squash noodles!
It is so simple, and you need exactly 2 ingredients- a squash and a lemon, technically, not including the curry and seasoning 🙂 And it can make a whole meal for one person or a snack for four people. The best part is, it has VERY LITTLE CARBS!!!

After baking at 375 F for 40-50 min:
Scoop with fork to get noodle like consistency
After tossing in spices, that literally takes only 5 minutes
Here’s the recipe
Bake and CUrried Spaghetti Squash (GF, vegan, low-calorie)
Ingredients:
1 medium spaghetti squash
coconut oil spray
For seasoning:
1 tsp. mustard seeds
2 green chilies cut lengthwise
1 tsp. sesame oil
1 tsp. chana dal
2 tbsp. cashew halves
1 tsp. fresh curry leaves
Salt to taste
Juice of 1 lemon
Cilantro for garnish
Method:
- Preheat oven to 375 F
- Cut the spaghetti squash lengthwise in half and scoop out the seeds
- Lightly spray the cut side with the cooking spray and place face down on a baking sheet lined with parchment paper
- Bake for 40-50 min
- Remove from oven and allow to cool a bit before scooping out the flesh into a bowl with a fork
- Heat a shallow pan and add sesame oil, mustard seeds, chana dal, cashew halves and allow the mustard seeds to pop
- When the mustard seeds pop, add curry leaves and green chilies
- Carefully add the baked squash, turn off the heat, add salt, and mix well
- Garnish with cilantro, squeeze a lemon and serve warm

WOW! This came out so delicious! I do the same thing, taking inspiration from a recipe and then changing it up. I had some left over roasted sweet potatoes so I just carmelized onions, browned the turkey in a pan, added some other vegetables, red thai chili paste, and a bit of lemongrass (along with everything you put in the recipe) and it came out amazingly delicious! My fiance was shocked because I put it together rather quickly and it was so yummy 🙂

This looks tasty but might I suggest that you swap cage-free organic for pastured organic. From what I know, it seems like a kinder option!
I make something very similar and freeze it. The trick is to reheat it in the oven and not the microwave (which makes it weird and soggy).
