strawberry chocolate chip ice cream with Greek yogurt

I do not have much of a sweet tooth, but I have a weakness for ice cream and stock up the freezer with the ‘good’ choices that are available out there. This summer I wanted to get a good ice cream maker to experiment with and make my own healthier versions. Following some advice from Brandi at The Vegan 8, I recently bought a Cuisinart ICE-21 machine. If you are thinking of making healthy ice cream/desserts, do check out her mouth-watering recipes!

It is a wonderful little product, maybe an indulgence on my part (I thought, do I really need an ice cream machine?) but it has been keeping me busy and my kids happy so far. I will make sure that it is used often 🙂 The picture above has not done full justice to the dessert, but it tasted really good! I’m taking this to the virtual party  Fiesta Friday #22 at The Novice Gardener’s hosted this week by Elaine and Prudy.

Here’s the ice cream maker in action:

Strawberry choclolate chip ice cream with greek yogurt

  • Servings: 5-6
  • Time: 35 minutes
  • Difficulty: easy
  • Print

Ingredients:

plain Greek yogurt- 1 1/2 cup (thick, hung yogurt could be used instead)

full fat coconut milk (with cream)- 1 cup

organic strawberries- 10 (about 200 gm)

Baker’s semi-sweet chocolate- 1 oz.

Raw sugar (I used Demarara)- 1/2 cup

Method: 

* Scoop out cream from a can of chilled coconut milk and measure out 1 cup along with the milk.

* Wash and hull berries, puree with sugar and gently heat on stove top till it reduces a little bit, about 10 minutes.

* Add Greek yogurt, strawberry mixture and coconut milk into your ice cream maker and churn according to instructions on the machine (mine took 25 minutes for a nice consistency).

* Cut chocolate into small bits and add it towards the end of the churning process.

* Serve immediately with more chocolate for garnish or freeze for later.

    I’m so glad you are loving your ice cream maker! It is soooo worth the investment and you can make ice cream anytime you want and any flavor you want for such better costs than storebought, and healthier! That’s a “need” to me! I love your ice cream flavor here too…what a great idea to add chocolate chips to strawberry ice cream. Delish!

    When summer started, I thought of buying an ice cream maker. Well, I didn’t buy. And every time I see my blogging friends make their own ice cream, I wanna slap myself. Ugh! I should have made my ice cream, too. Good choice to buy an ice cream maker, Aspara – this looks absolutely perfect for summer. 🙂

    Welcome to Fiesta Friday Apsara!! I wish I didn’t have sweet tooth! I’m so happy you bought an ice cream maker! I absolutely love mine… Throw some pureed fresh fruit and you have instant sorbet! I keep the bowl in the freezer all the time, so that I can use it at a moment’s notice! Your strawberry chocolate chip ice cream is so lovely…I need to give it a try! I just bought some plain yogurt yesterday to make ice cream for my black lab, but I’m thinking that I might steel a container of hers to make us some of this beautiful ice cream! I love the combination of strawberries and chocolate! Yum..just yum!! Thank you so much for sharing this lovely recipe at our table this week! <3

    À good ice-creamer, you really need in your life to make delicious ice-creams like yours & to make vegan ones too!

      True! Vegan ice creams are not good unless made at home and consumed right away. 🙂

    Yum! This recipe sounds fantastic! love the ingredients! I love that you added Greek yogurt, I am sure this gave it a really nice touch! I also love to make “ice cream” with greek yogurt, I just add frozen fruits to it and blend. I think I must invest in an ice cream maker sometimes to make more experiments 😉 thanks for sharing!
