Mango and date smoothie (vegan)

Mangoes that we get in the U.S are not as tasty as the ones we get in India. I still buy them, but then I don’t want to feel the disappointment when it is eaten by itself. That’s when a smoothie is a great idea! Nothing fancy, I just combined it with dates and some coconut milk that I wanted to use up.

I am a little late for the virtual party at The Novice Gardener’sย place, Fiesta Friday #18, this time hosted by Mr. Fitz of Cooking With Mr. Fitz and Justine of Eclectic odds n sods. But here I am with a simple, but filling smoothie. Thank you, Angie, Mr. Fitz and Justine!

mango and date smoothie

  • Servings: 3-4
  • Time: 15 minutes + chill time
  • Difficulty: very easy
  • Print

Ingredients:

Sliced mango- from 2 mediumย mangoes

dates- 15

coconut milk- 3/4 cup

water- 1-2 cups

blueberries- for garnish

Method:

* Soak dates in 1 cup hot water for 10 minutes.

* Blend dates first, then add mango slices, coconut milk and water; blend till smooth.

* Chill before serving.

    So easy!! You are right. I bought mangoes at a supermarket last week in CA, but the taste matched no where with those we get in India. Next time I’ll try this way so that being a mango lover, I need not skip them from my menu.

    Your smoothie is very delish and seems simple enough to make! A perfect combo for upcoming summer! I have a question: what is the purpose of soaking the dates for 10 minutes in hot water? I would like to learn and know please. Thank you, Apsara. ๐Ÿ™‚

      thanks for the comment, Violet. The dates (dry fruit) just get softer when soaked, easier to blend. Maybe I should have mentioned it is the dry fruit? I will, actually. ๐Ÿ™‚

    Sounds perfect to me:) mango and coconut such a great combination and dates are natural sweetener. Yummy!
