Vegan pineapple and strawberry smoothie
What would you do if you had a big ripe pineapple and a handful of fresh strawberries staring at you and no space in the fridge? That was my situation this evening, and I decided it was time for a smoothie! Even if spring blossoms are not here yet, we can imagine fully blossomed trees with this yummy tropical drink, right?
Preparation time: 10 minutes. Serves: 3-4
diced pineapple- 1 cup
coconut milk- 3/4 cup
pure maple syrup- 3-4 tbsp.
* Remove stems from strawberries, chop roughly and blend all ingredients in a blender. Garnish with mint leaves. Enjoy!
