Mango and date smoothie (vegan)
Mangoes that we get in the U.S are not as tasty as the ones we get in India. I still buy them, but then I don’t want to feel the disappointment when it is eaten by itself. That’s when a smoothie is a great idea! Nothing fancy, I just combined it with dates and some coconut milk that I wanted to use up.
I am a little late for the virtual party at The Novice Gardener’s place, Fiesta Friday #18, this time hosted by Mr. Fitz of Cooking With Mr. Fitz and Justine of Eclectic odds n sods. But here I am with a simple, but filling smoothie. Thank you, Angie, Mr. Fitz and Justine!

water- 1-2 cups
blueberries- for garnish
* Soak dates in 1 cup hot water for 10 minutes.

I would love this smoothie right about now.
I wish you could take it from me now! 🙂

Lovely combination Apsara with the dates, mango and coconut! Thanks for sharing and happy FF to you!
happy FF to you too, Selma!
Not late at all! Some may peak a little early.. so your smoothie looks just the ticket to pick everyone back up again… ! Happy FF18!

Beautiful flavors and textures I’m sure – just in time for a refreshing summery drink.
thanks, Loretta. 🙂
So easy!! You are right. I bought mangoes at a supermarket last week in CA, but the taste matched no where with those we get in India. Next time I’ll try this way so that being a mango lover, I need not skip them from my menu.
Hi Swetha, welcome to my blog! I am checking out yours, and it is perfect! I am a ‘sciency’ person too. 🙂
Your smoothie is very delish and seems simple enough to make! A perfect combo for upcoming summer! I have a question: what is the purpose of soaking the dates for 10 minutes in hot water? I would like to learn and know please. Thank you, Apsara. 🙂
thanks for the comment, Violet. The dates (dry fruit) just get softer when soaked, easier to blend. Maybe I should have mentioned it is the dry fruit? I will, actually. 🙂
That makes so much sense! I’ve tried blending dates before and it was always sticky and hard to blend. I like your helpful tip! 🙂 Thank you!!
I made these but used less dates, only 5! It was superb! x
Really? You are so sweet, Sophie, and I’m sure the mangoes you used were very sweet too. Thank you for the feed back.
Really, how do you find time to try out so many of these; you’ve surely made my day, no, my week.:) xx
I love cooking from my favorite blogs! 🙂 xxx
lovely combo! Looks yum! 🙂
This looks delicious!
thanks, Sridevi. 🙂
Sounds perfect to me:) mango and coconut such a great combination and dates are natural sweetener. Yummy!
