No-bake energy bites with Nutella (grain free)

After I made Nutella, even if I was eating it out of the jar non-stop, I realized that the kids did not share my enthusiasm in consuming it. I had to make something with it, then!

There are many versions of Nutella truffles and pies out there. After much thought, I settled on trying something very simple, a no-bake bar for a quick snack. This is disappearing fast in my house and I will make another batch to take to Fiesta Friday #21, hosted by Angie @ The Novice Gardener.

I have used a combination of dried fig for sweet and cranberries for tart flavor. Sunflower seeds for crunch. Any dried fruit can be used, with other nuts as well, to make this versatile snack.

Energy bites with Nutella

  • Servings: 16
  • Time: 10 minutes + chill time
  • Difficulty: easy

Ingredients:

Homemade Nutella– 1/2 cup

dried figs- 5

dried cranberries- 1/2 cup

roasted sunflower seeds- 1/2 cup

cacao nibs/dark chocolate bits- 2 tbsp.

cocoa powder + powdered sugar- 2 tbsp. (for dusting)

Method:

* Add roughly chopped bits of fig, cranberries in a food processor/blender, pulse.

* Add Nutella, sunflower seeds, chocolate bits and pulse again till combined.

* Transfer the chewy mixture to a loaf pan lined with parchment/wax paper. Refrigerate for 1 hour.

* Cut squares and coat with cocoa powder/powdered sugar mixture (optional).

* Store in the fridge.

    Apsara, I would have been eating that delicious homemade nutella out of the jar too! I’m impressed that you had the strength to take it and make something with it…and boy you made something so delicious!! I love the idea of mixing it with dried fruit and seeds, and making them into what I can imagine to be ooey and gooey crazy delicious bars! I’m totally trying this….Awesome post! <3
