Superfoods smoothie

What is a superfood? I first came across this term while watching the documentary ‘Food Matters’. They are highly nutrient dense foods that are shown to have beneficial properties, such as anti-oxidants, that may reduce the risk of certain chronic conditions.

Healthy foods actually have a scoring system called ANDI (aggregate nutrient density index) that helps us choose what to buy at a supermarket, wisely. A blogger friend of mine, Sylvia has a beautiful blog called Superfoodista in which she has an overview of superfoods.

I recently visited a natural foods store and picked up a few, including goji berries and raw cacao (unprocessed cocoa). Cacao can be used in place of cocoa powder. Goji berries, however, I found are not great to eat on their own! So they went into a smoothie, adding rich color in addition to loads of vitamins and minerals. I have used avocado, another ‘super fruit’ to make this delicious and filling vegan smoothie, perfect for someone training for a marathon, for example. No, I do not run, 🙂 that was just an example!

  • Servings: 1
  • Time: 10 minutes
  • Difficulty: easy

Ingredients:

almond milk- 1 1/2 cup

avocado- 1/2 of a ripe fruit

cacao powder- 2 tsp.

organic goji berries- 1/4 cup

pure maple syrup- 2 tbsp.

Method:

* Heat 1/2 cup of almond milk on stove top till warm and add goji berries to it. Let it soak while you get the other ingredients ready.

* Cut the avocado in half, scoop out flesh from one half with a spoon into a blender. Add goji berries, extra almond milk and the other ingredients. Blend.

* Chill till serving time.

    A great tasty smoothy! Filling too with the avocado in here! I also begin to use goji berries & love them too. I make them into raw chocolate!
